Slow Cooked Beef 

A simple, comforting one pot meal using our slow cooker joints - brisket or topside.

Ingredients (serves 6–8)

1.5 kg rolled beef joint (brisket, topside or similar)

2 tbsp plain flour 

Salt & ground black pepper

3 carrots, chopped

3 sticks celery, chopped

2 parsnips, chopped

1 onion, chopped

2 bay leaves

2 garlic cloves, crushed

650 ml good quality beef stock

Method

Prepare & season the beef:
Lightly dust the joint with flour, then season generously with salt and pepper.

Sear for flavour:
Heat the oil in a large pan over medium-high heat. Sear the beef on all sides until nicely browned.

Layer vegetables in the slow cooker:
Place the chopped carrots, celery, parsnips, onion in the base of your slow cooker.

Add the beef on top:
Put the seared beef joint on top of the vegetables.

Add seasonings & liquids:
Tuck in the bay leaves and garlic. Pour over the beef stock.

Slow cook:
Cover and cook on low for 7–8 hours until the meat is tender and easily pulls apart with a fork.

Rest & serve:
Remove the beef and let it rest for 15–20 minutes. If you like a thicker gravy, pour the cooking liquid into a saucepan and simmer briefly to reduce slightly. Serve with roast potatoes, vegetables and gravy.
